The Living Breathing James Brown’s Homemade Pimento Cheese for Celery, Crackers, Chips or Sandwiches

Today, I’m sharing with you my own Pimento Cheese Recipe.

If you love Pimento Cheese for your Quick Lite Lunch with Celery Sticks or on Bread, well, here something for you to Try. Or for that Party that’s coming over for the FINAL FOUR Games! I promise I don’t POST a Recipe I don’t USE. This is the one I use.. The one I like most.

No it’s not from Copying of Anyone’s else’s Recipe.

My wife and I have spent the last 6 months couped up in out home trying to make one we Like. And trust this! My wife is a Huge Critic when she doesn’t LIKE something.

But Why try? To prove You are still Somebody! But for me?

An 88 year old woman, 40 years ago, made me the Best Pimento Cheese Sandwiches I ever had. And I asked her which Brand she was using and she Said-

“This is Homemade, I ain’t never bought it already made from no Store!”

And I didn’t get the recipe before she passed away. So, At first, I did try Copycat Recipes but they weren’t like that Old Lady’s. None were. No Store Bought was either.

But I kept trying again and again. And finally, my taste buds figured it out as close as I can get to her wonderful Old Lady Recipe. And I do hope you will try it. It’s easy to make. But don’t try it if you are too lazy. But if you like exploring. Discovering new things. Then get to it…

Here’s What I used in mine-

  1. One Block of Cream Cheese, cheaper to buy in the two pack, put in a Tupperware Dish and cooked for 120 seconds in a Microwave. You plastic bowl or rectangular looking bowl must be big enough to hold all of the ingredients.
  2. Grate a large 16oz Block of Extra Sharp Cheddar Cheese over your Cream Cheese.. Yes, the whole thing. Next comes the real ingredients-
  3. Sprinkle Black Pepper on the top. To your taste.
  4. Sprinkle Lemon Pepper on the Top for your Taste.
  5. Add 1/2 Cup of Kraft Mayonnaise.0
  6. Add Two Small Jars of DRAINED Pimentos. DO NOT ADD LIQUID. I used one from Kroger and one from Wal-Mart.
  7. I added a big Tablespoon of Sliced Green Olives with Pimentos from the Jar. Add two Tablespoons of the liquid from this Jar. This is the Sliced Green Olives/Pimentos most of us buy to add to salads. Lettuce Salads and Potatoes Salad.
  8. Add Two Dashes of your Favorite Hot Sauce. NO MORE! THREE or more Dashes will kill the beautiful taste of your Homemade Pimento Cheese.
  9. Sprinkle Salt Substitute on the Top.

Now, with a Big Wood Spoon, turn it upside Down and get to stirring. Stir and Stir and Stir. And in about two to three minutes of stirring by hand, out the top on it and put it in the Refrigerator.

Wait 90 minutes or 24 Hours. Then get it out and put your wonderful Pimento Cheese on RITZ CRACKERS, NABISCO CRACKERS, BREAD, or Celery Sticks you’ve cut into 3-5 inch sticks of Celery.

But this is a great Party Dip to Pull out and served your Guests. If you like Margaritas, Modelo, or Martinis, you’ll love this Pimento Cheese YOU MADE.

And this is what I learned! Don’t Tweek it or you’ll mess it up. And it’s taken 3 months of trial and error to find a Recipe that I feel good about sharing with you.

Below are Items to look for and what I used-

Use only one Cream Cheese Square. It is cheaper to buy the 2 PACK.

You need two small Jars of Pimentos. I used one from Kroger and one from Wal-Mart. Great Value Brand. Kroger Brand.
